Honey Cake



1 1/2C cake flour
1C honey
1/2C vegetable oil
1Tbsp lemon juice
1/2tsp salt
1tsp baking soda
1tsp grated lemon zest (or maybe a little more)
3/4C cold water

Method: preheat oven to 325F.
Sift flour, salt, baking soda and stir in lemon zest.
Blend honey, oil, water and lemon juice.
Mix wet +dry ingredients and pour into 8x8 pan (or use 2 smaller pans like I did) bake till toothpick test.
